A vibrant, fresh, and flavorful salad with shredded chicken, crunchy vegetables, and zesty toppings.

Ingredients

  • 1 lb cooked chicken breast, shredded
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or cooked
  • 1/2 cup red onion, diced
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • Tortilla chips (optional)

Instructions

  1. Combine Fresh Ingredients: In a large bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, red onion, avocado, and shredded chicken.
  2. Mix Salsa and Lime Juice: In a small bowl, mix together the salsa and lime juice.
  3. Toss to Coat: Pour the salsa mixture over the salad and toss to coat all the ingredients.
  4. Season to Taste: Add salt and pepper to taste, adjusting until the flavors sing.
  5. Top it Off: Top with a sprinkle of shredded cheese and add tortilla chips if desired.
