Protein Packed Cottage Cheese Banana Bread

A healthier twist on classic banana bread, packed with protein from cottage cheese and flavored with ripe bananas and cinnamon.

Ingredients

  • 3 medium Ripe Bananas (overripe preferred for sweetness)
  • 1 cup Cottage Cheese (low-fat for a lighter option)
  • 2 large Eggs
  • 1/2 cup Honey (can be substituted with maple syrup)
  • 1 1/2 cups All-Purpose Flour (or whole wheat flour)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
  2. Mash the overripe bananas until smooth in a large mixing bowl.
  3. Add the cottage cheese, eggs, and honey (or maple syrup) to the mashed bananas and mix until well incorporated.
  4. Whisk together the flour, baking soda, cinnamon, and salt in another bowl.
  5. Gradually add the dry mixture to the wet ingredients, folding them together gently.
  6. Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
  7. Place the loaf pan in the oven and bake for 45-50 minutes, or until a skewer inserted in the center comes out clean.
  8. Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Experiment with adding nuts or chocolate chips for extra flavor!
