A delightful dish that combines sweet and tangy pineapple with tender pork and crunchy bell peppers, perfect for family meals.

Ingredients

Scale
  • 1 lb Pork Shoulder
  • 1/2 cup Cornstarch
  • 1/4 cup Soy Sauce
  • 1/4 cup Rice Vinegar
  • 1 tbsp Sesame Oil
  • 2 cups Bell Peppers
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 cup Pineapple Chunks
  • 2 tbsp Green Onions
  • 1 tbsp Sesame Seeds
  • 1/4 cup Cilantro

Instructions

  1. Start by cutting your pork shoulder into bite-sized pieces. Sprinkle cornstarch over the pork and toss it well until they are evenly coated.
  2. In a medium bowl, whisk together the soy sauce, rice vinegar, and sesame oil.
  3. Heat a large pan over medium-high heat and add a splash of oil. Add minced garlic and fresh ginger.
  4. Carefully add the pork pieces to the pan in a single layer. Cook for about 4-5 minutes until golden brown and crispy.
  5. In the same pan, toss in the bell peppers and pineapple chunks. Stir-fry for about 3-4 minutes.
  6. Return the crispy pork to the pan with the veggies and pour the soy sauce mixture over the top.
  7. Finish with a sprinkle of sesame seeds and chopped green onions before serving.

Notes

For extra crispy pork, try double frying the pork. Feel free to adapt the vegetables based on what you have on hand.
