Blueberry Muffins

Deliciously soft and moist blueberry muffins that are easy to make and perfect for any time of the day.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix the flour, baking powder, and salt in a bowl until combined.
  3. Whisk together the sugar, sour cream, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the blueberries gently to avoid breaking them.
  6. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool the muffins in the tin for a few minutes before transferring to a wire rack.

Notes

Enjoy with a dab of butter or cream cheese. Store leftovers in an airtight container for up to three days.
