Delicious and fluffy blueberry muffins, perfect for breakfast or snacks, evoking warmth and nostalgia.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the flour, sugar, baking powder, and salt.
  3. Whisk together the milk, vegetable oil, and eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently.
  6. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes

For added flavor, sprinkle a little cinnamon or lemon zest into the batter. Store in an airtight container for up to 3 days or freeze for up to 3 months.
