Brown Butter Brookies

Delicious brookies combining rich, fudgy brownies with soft chocolate chip cookies, enhanced by nutty browned butter.

Ingredients

  • 1 cup salted butter
  • 1 cup dark brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup semi-sweet chocolate, chopped
  • 1/4 cup vegetable oil
  • 1/2 cup cocoa powder
  • 1 egg yolk
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350℉ (175℃) and prepare a 9×13 pan with nonstick spray and parchment paper.
  2. In a large bowl, melt the butter and whisk in dark brown sugar and granulated sugar.
  3. Add the eggs and vanilla extract, whisking until smooth. Fold in flour, baking soda, salt, and chocolate chips.
  4. In a medium saucepan, brown the cubed butter over medium heat until golden brown and nutty.
  5. Stir in chopped semi-sweet chocolate until melted. Mix in vegetable oil and cocoa powder.
  6. In a separate bowl, whisk eggs, egg yolk, and sugar until smooth, then blend in powdered sugar, vanilla, and salt.
  7. Fold the chocolate mixture and dry ingredients into the wet mix.
  8. Spread more than half of the brownie batter in the prepared pan, layer with cookie dough, and top with remaining brownie batter.
  9. Bake for 38 to 44 minutes until the cookie layer is golden and a toothpick comes out with moist crumbs.
  10. Cool for 1-2 hours before slicing.

Notes

For extra indulgence, serve with vanilla ice cream or drizzled caramel. Store leftovers in an airtight container for up to 3-4 days.
