Caramel Brownie Cheesecake

A luxurious layer of rich, fudgy brownie topped with smooth cheesecake swirled with gooey caramel.

Ingredients

  • 1 package brownie mix
  • 24 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup caramel sauce
  • Whipped cream (for topping)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven according to the brownie mix package instructions. Prepare the brownie mix as directed and spread the mixture into a greased or lined springform pan. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
  2. Beat the softened cream cheese with the granulated sugar in a large bowl until smooth and creamy. Add in the vanilla extract, sour cream, and heavy cream, mixing until fully incorporated. Add the eggs one at a time, beating well after each addition.
  3. Drizzle half a cup of caramel sauce into the cheesecake batter and gently fold it in to create swirls.
  4. Pour the cheesecake mixture over the baked brownie base and spread it evenly. Bake for 50-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and let it cool slowly with the door cracked for about an hour.
  5. Transfer to the refrigerator and chill for at least 4 hours, or overnight. Before serving, top with whipped cream, chocolate shavings, and additional caramel.

Notes

Ensure the cream cheese is fully softened for a smooth texture. Use a hot knife for clean cuts when slicing.
