Chopped Shrimp Fried Rice

A comforting and delicious Chopped Shrimp Fried Rice, perfect for using up leftovers and enjoying with family.

Ingredients

  • 2 cups cooked rice
  • 1 pound shrimp, peeled and chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add the chopped shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  3. Push the shrimp to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked.
  4. Stir in the mixed vegetables and let everything cook together for another 2 minutes.
  5. Add the cooked rice and soy sauce, mixing everything well.
  6. Sprinkle with salt and pepper to taste.
  7. Stir in the chopped green onions before serving.

Notes

Make sure your rice is cold for the best texture. Customize with your favorite proteins or veggies.
