  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon thyme

Instructions

  1. Mix together the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, and pepper. Use your hands to combine well before shaping into meatballs.
  2. Heat the olive oil in a skillet over medium heat, then add the meatballs, cooking until browned on all sides for about 8-10 minutes. Remove from skillet and set aside.
  3. Add the sliced mushrooms to the same skillet and cook until tender and golden, about 5 minutes.
  4. Stir in the heavy cream, chicken broth, and thyme, bringing to a gentle simmer to thicken the sauce for about 5 minutes.
  5. Return the browned meatballs to the skillet, simmering them in the sauce for an additional 10-15 minutes, until cooked through.
  6. Serve warm with pasta, rice, or bread to enjoy the sauce.

Notes

For extra flavor, consider adding red pepper flakes or substituting ground turkey or beef for the chicken.
