A comforting Crockpot Sausage Casserole that brings warmth and hearty flavors to your dinner table.

Ingredients

  • 1 lb sausage (Italian or smoked)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can diced potatoes (or fresh, chopped)
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 2 cups vegetable broth
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Layer the Base Ingredients: In a Crockpot, layer the chopped onions, bell peppers, and sausage.
  2. Add the Tomatoes and Potatoes: Add the diced tomatoes and potatoes on top of the layered goodness.
  3. Pour the Broth and Season: Pour in the vegetable broth and sprinkle on garlic powder, basil, salt, and pepper.
  4. Combine Gently: Stir to combine all ingredients, allowing flavors to mingle.
  5. Cover and Cook: Cover your Crockpot, cooking on low for 6-8 hours or high for 3-4 hours.

Notes

For a spicy kick, use hot Italian sausage or add red pepper flakes. Customize the veggies and seasonings to your taste.
