  • 1 lb Ground lamb (or beef or pork)
  • 1 cup Minced onion
  • 3 cloves Garlic (minced)
  • 1 large Egg
  • 1 cup Feta cheese
  • 2 tbsp Greek seasoning
  • 1 tsp Salt (adjust to taste)
  • 1 cup Plain yogurt (strained)
  • 1 medium European cucumber (peeled and drained)
  • 2 tbsp Chopped fresh mint
  • 2 tbsp Chopped fresh dill
  • 1 tbsp Olive oil
  • 1 tsp Black pepper (freshly ground)
  • 2 cups Cooked rice (white or brown)
  • 2 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Salt (adjust to taste)
  • 1 cup Tomatoes (diced)
  • 1 cup Diced cucumber (well drained)
  • 1 tsp Salt
  • 1 cup Hummus
  • 1/2 cup Crumbled feta
  • 1 tbsp Chopped dill or parsley
  • 1 tsp Sumac
  • 4 units Pitas (soft and warm)

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground lamb (or your choice of meat), minced onion, minced garlic, egg, feta cheese, Greek seasoning, and salt. Mix everything with your hands until just incorporated—be careful not to over-mix, as this will keep your meatballs tender.
  2. Form and Cook the Meatballs: Preheat your skillet over medium heat, drizzling in the olive oil. Form the meat mixture into meatballs (about 1 to 1.5 inches) and add them to the hot skillet. Cook until browned on all sides, approximately 10-15 minutes. Once cooked through, set them aside and keep warm.
  3. Whip Up the Tzatziki Sauce: In a separate bowl, mix the strained yogurt, finely grated cucumber, mint, dill, and a pinch of salt. Stir thoroughly to combine, and for an extra zing, add a splash of lemon juice. Let it chill while you prepare the rest of the bowl.
  4. Prepare the Lemon Rice: In a small pot, combine the cooked rice and season it with fresh lemon juice, salt, and black pepper. Stir it gently so that each grain is coated with the zesty goodness.
  5. Assemble the Fresh Veggie Mix: In another bowl, toss together diced tomatoes, drained cucumber, and a pinch of salt. This fresh mix will add crunch and brightness to your gyro bowl.
  6. Final Assembly of Your Delicious Gyro Bowl: To assemble, start with a generous scoop of lemon rice in a bowl, add the warm meatballs on top, and then dollop with tzatziki. Surround the bowl with your fresh veggie mix, hummus, crumbled feta, and a sprinkle of sumac. Warm pitas on the side complete your beautiful creation.
