A colorful and flavorful Doritos Taco Salad that combines fresh veggies, seasoned beef, and crunchy Doritos for a festive meal.

Ingredients

Scale
  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 packet (1 oz / 28 g) taco seasoning
  • ? cup water
  • 1 large head romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup canned corn (drained)
  • ½ cup shredded cheddar cheese (or Mexican blend)
  • 1 cup crushed Nacho Cheese Doritos
  • ½ cup diced red onion
  • ½ cup sliced black olives (optional)
  • ½ cup Catalina or ranch dressing (to taste)

Instructions

  1. Cook the meat in a large skillet over medium heat until browned, breaking it apart with a spoon for about 6–8 minutes. Drain any excess fat.
  2. Season the meat by adding the taco seasoning and water. Stir and let it simmer for 2–3 minutes.
  3. Assemble the salad base in a large bowl by adding chopped romaine lettuce, halved cherry tomatoes, rinsed black beans, drained corn, diced red onion, and olives.
  4. Add the seasoned beef mixture over the salad base and sprinkle shredded cheese on top.
  5. Create the crunch factor by adding crushed Doritos right before serving.
  6. Dress the salad by drizzling Catalina dressing over the top and toss gently until well combined.
  7. Serve immediately with extra Doritos on the side.

Notes

Great paired with homemade guacamole and salsa. Store leftovers in the fridge for up to 2 days, keeping Doritos separate.
