Shrimp Fried Rice

A comforting and flavorful shrimp fried rice packed with fresh veggies and perfectly cooked rice.

Ingredients

Scale
  • 300g Shrimp
  • 1 Garlic clove, minced
  • 1 tsp Ginger, minced
  • 2 Scallions, chopped
  • 1 Carrot, diced
  • 2 Eggs
  • 2 cups Cooked rice (preferably day-old for best texture)
  • 3 tbsp Soy sauce

Instructions

  1. Heat a pan over medium heat and add a little oil.
  2. Add minced garlic and ginger, sauté until fragrant.
  3. Cook shrimp until pink.
  4. Push shrimp to one side of the pan, crack eggs on the other side, and scramble.
  5. Add chopped scallions and diced carrot, cook for a few minutes.
  6. Stir in the cooked rice and soy sauce, mix well.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Serve hot and enjoy!

Notes

Use day-old rice for the best results. Feel free to mix in any vegetables you have on hand.
