Garlic Butter Beef Bites with Potatoes

A comforting dish of tender beef bites and baby potatoes bathed in rich garlic butter sauce, perfect for family dinners.

Ingredients

  • 1.5 pounds Beef stew meat, cut into bite-sized pieces
  • 1 pound Baby potatoes, halved
  • 4 tablespoons Unsalted butter, melted
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt, or to taste
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Gather all ingredients and cut the beef into bite-sized pieces and halve the baby potatoes.
  2. Sear the beef bites in heated olive oil until browned on all sides.
  3. Create the garlic butter sauce by combining melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  4. Assemble in the slow cooker with halved potatoes and seared beef, pouring the garlic butter sauce and beef broth over top.
  5. Slow cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
  6. Let the dish rest for about 10 minutes before serving.

Notes

Serve with steamed green beans or a garden salad. A splash of beef broth can help reheat leftovers.
