A vibrant bowl featuring baked beef meatballs, tender baby potatoes, and a refreshing Greek salad, embodying the flavors of the Mediterranean.

Ingredients

  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups baby potatoes, halved
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, oregano, salt, and black pepper in a bowl.
  3. Form the mixture into even meatballs, about 1 inch in size, and place them on a baking sheet lined with parchment paper.
  4. Toss the halved baby potatoes with the olive oil, salt, and pepper in a separate bowl.
  5. Bake the meatballs and potatoes in the preheated oven for 20-25 minutes.
  6. Combine the cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, chopped parsley, and red wine vinegar in a large bowl.
  7. Serve the meatballs and tender potatoes over the vibrant Greek salad.

Notes

For a spicier kick, add crushed red pepper flakes to the meatball mixture. Leftovers are delicious and can be stored for up to 3 days.
