Ingredients

Scale
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease it well.
  3. Whisk together the flour, sugar, baking powder, salt, and nutmeg (if using).
  4. In a separate medium bowl, whisk together the egg, milk, oil (or melted butter), and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
  6. Gently fold in the fresh blueberries.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh blueberries for the best flavor. For an extra touch of sweetness, sprinkle sugar on top before baking.
