Cottage Cheese Banana Oatmeal Breakfast Bake

A warm, hearty breakfast bake combining creamy cottage cheese, ripe bananas, and wholesome oats for a nourishing start to your day.

Ingredients

  • 2 cups Cottage Cheese
  • 2 large Bananas
  • 2 cups Rolled Oats
  • 3 large Eggs
  • 1 tbsp Baking Powder
  • 1/4 cup Honey
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon or Nutmeg
  • 1/2 cup Nuts (Walnuts or Pecans)
  • 1/2 cup Chocolate Chips or Dried Fruit

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure it’s ready for baking.
  2. In a large mixing bowl, combine the cottage cheese and mashed bananas, stirring them together until well mixed.
  3. Crack the three large eggs into the bowl and whisk them into the banana-cottage cheese mixture until fully combined.
  4. Sprinkle in the rolled oats, baking powder, honey, vanilla extract, and your choice of cinnamon or nutmeg. Mix until everything is just blended.
  5. Stir in your nuts and chocolate chips or dried fruit, making sure they are evenly distributed throughout the mixture.
  6. Lightly grease a 9×9 inch or similar-sized baking dish, then pour the mixture into the dish, smoothing it out evenly.
  7. Place the dish in the preheated oven and bake for about 30-40 minutes, or until the edges turn golden brown and the center sets.
  8. Once baked, allow the breakfast bake to cool for a few minutes before slicing. Serve warm and enjoy every delicious bite.

Notes

Use very ripe bananas for maximum sweetness and flavor. Adjust the sweetness by adding more or less honey. For an extra treat, top with peanut butter or almond butter just before serving.
