A comforting pasta dish combining fettuccini with zesty Buffalo chicken and a creamy Alfredo sauce, perfect for busy weeknights.

  • 12 oz Fettuccini Pasta (Fresh or dried)
  • 1.5 lbs Chicken Breast or Tenders
  • 3 tbsp Olive Oil
  • Salt (To taste)
  • Pepper (To taste)
  • 6 tbsp Butter
  • 8 cloves Garlic (Minced)
  • 1.5 cups Heavy Cream
  • 0.5 cups Half and Half or Milk
  • 0.5 tsp Italian Seasoning
  • 0.33 cups Buffalo Sauce
  • 0.75 cups Parmesan Cheese (Grated)
  • 2 tbsp Fresh Parsley (Minced)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Toss in the fettuccini and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a cup of the pasta water.
  2. Sauté the Chicken: In a large skillet over medium heat, add olive oil. Season the chicken with salt and pepper. Once the oil is shimmering, add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and slice into bite-sized pieces.
  3. Create the Creamy Base: In the same skillet, reduce the heat to medium-low and melt the butter. Add the minced garlic, sautéing until fragrant but not browned, about 1-2 minutes.
  4. Build the Alfredo Sauce: Pour in the heavy cream and half-and-half, stirring to combine. Bring to a gentle simmer, allowing it to thicken. Add the Italian seasoning and season with salt and pepper to taste.
  5. Add the Kick: Stir in the Buffalo sauce, adjusting to your heat preference.
  6. Combine it All: Add the drained pasta and Parmesan cheese, tossing gently. If the sauce is too thick, add reserved pasta water until desired consistency is achieved.
  7. Final Touches: Return the sliced chicken to the skillet and toss everything together one last time over low heat to warm through.
  8. Serve and Garnish: Spoon the pasta onto plates, garnishing with fresh parsley and extra Parmesan if desired.

Notes

Serve with a side salad or roasted vegetables. Store leftovers in an airtight container for up to 3 days.
