Creamy Marry Me Shrimp Pasta

A romantic pasta dish with creamy sauce, fresh shrimp, and sun-dried tomatoes, perfect for date night.

Ingredients

  • 1 pound Fresh Extra-Large Shrimp (peeled and deveined)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Italian Seasoning
  • Black Pepper (to taste)
  • Salt (to taste)
  • 2 tablespoons Sun-Dried Tomato Oil
  • 2 tablespoons Tomato Paste
  • 1 cup Sun-Dried Tomatoes (chopped)
  • 1 teaspoon Sweet Smoked Paprika
  • 1 teaspoon Dried Basil
  • 3 tablespoons Gluten-Free 1:1 Flour
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese (grated)
  • 2 cups Fresh Spinach
  • 1 medium Minced Onion
  • 3 cloves Minced Garlic
  • 8 ounces Gluten-Free Penne Pasta
  • 1/4 cup Fresh Basil (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Aromatics: In a large skillet, heat the sun-dried tomato oil over medium heat. Add the minced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Prepare the Shrimp: Add the fresh shrimp to the skillet, seasoning them with smoked paprika, Italian seasoning, black pepper, and salt. Cook until shrimp turn pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.
  4. Create the Sauce: In the same skillet, add the tomato paste and sun-dried tomatoes. Cook for 2-3 minutes. Sprinkle in the gluten-free flour and mix to combine.
  5. Mix in the Cream: Slowly pour in the heavy cream, stirring constantly. Allow the sauce to simmer and thicken for about 4-5 minutes.
  6. Combine the Ingredients: Add the cooked pasta to the sauce, along with the cooked shrimp, fresh spinach, sweet smoked paprika, and dried basil. Toss together until well coated.
  7. Finish with Cheese: Sprinkle grated Parmesan cheese over the pasta and stir until melted. Taste and adjust seasoning as necessary.
  8. Garnish & Serve: Plate the pasta beautifully, garnishing with freshly chopped basil. Serve immediately.

Notes

For a dairy-free option, use coconut cream instead of heavy cream.
