Ingredients

Scale
  • 2 cups corned beef, chopped
  • 1 cup sauerkraut, drained and chopped
  • 1 cup Swiss cheese, shredded
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • Thousand Island dressing, for serving

Instructions

  1. Combine the corned beef, sauerkraut, and Swiss cheese until well mixed.
  2. Form the mixture into small balls, about the size of a golf ball.
  3. Dip each ball into the beaten eggs, then roll them in breadcrumbs until fully coated.
  4. Heat vegetable oil over medium heat in a deep fryer or large pot.
  5. Fry the balls until golden brown on all sides, about 4-5 minutes.
  6. Drain on paper towels to absorb any excess oil.
  7. Serve hot with a side of Thousand Island dressing for dipping.

Notes

Ensure your oil is hot enough before frying and don’t overcrowd the frying pot for the best results.
