A cozy one-pot chicken curry simmered with aromatic spices and coconut milk, perfect for chilly evenings.

  • 2 pounds Chicken Thighs
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 tablespoon Fresh Ginger
  • 2 tablespoons Tomato Paste
  • 2 tablespoons Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 can Coconut Milk
  • 1 cup Chicken Broth
  • 2 tablespoons Cooking Oil

Instructions

  1. Prepare Your Ingredients: Gather all the ingredients, chop the onion, mince the garlic, and grate the ginger.
  2. Sauté Aromatics: Heat oil in a large pot and sauté onions until translucent. Add garlic and ginger, cooking until aromatic.
  3. Add the Spices: Toast curry powder, ground cumin, and paprika in the pot.
  4. Introduce the Chicken: Sear chicken thighs on each side until browned.
  5. Mix in Tomato Paste: Stir in the tomato paste, coating the chicken.
  6. Pour in Coconut Milk & Broth: Combine coconut milk and broth in the pot.
  7. Simmer to Perfection: Cover and simmer for 20-25 minutes until chicken is tender.
  8. Shred and Serve: Remove chicken, shred, and return to the pot. Adjust seasoning.
  9. Prepare for Serving: Let the curry rest before serving.

Notes

This curry is perfect served over basmati rice or with naan. Adjust spice levels and feel free to substitute proteins as needed.
