A nostalgic no-bake dessert featuring tropical flavors of pineapple and coconut, perfect for summer gatherings.

Ingredients

  • 20 ounces Crushed Pineapple (Drain well)
  • 3.4 ounces Instant Vanilla Pudding Mix
  • 8 ounces Whipped Topping
  • 1 cup Sweetened Shredded Coconut
  • 1 cup Miniature Marshmallows
  • 1/2 cup Chopped Pecans (Optional)
  • 1/2 cup Maraschino Cherries

Instructions

  1. Drain the pineapple into a strainer and let it drain thoroughly.
  2. Whisk together the instant vanilla pudding mix and the drained pineapple in a mixing bowl.
  3. Fold in the whipped topping gently with a spatula.
  4. Stir in sweetened shredded coconut and miniature marshmallows.
  5. Fold in chopped pecans if using.
  6. Add maraschino cherries and fold gently.
  7. Transfer to a serving bowl, cover, and chill for at least 1 hour before serving.

Notes

Make ahead for easy serving at gatherings. Customize with different nuts or fruits if desired.
