Recreate the delightful Egg White Bites from Starbucks right in your own kitchen with these fluffy, filling, and flavorful bites that pack a healthy punch.

Ingredients

  • 1 cup Pasteurized egg whites
  • 1/2 cup Cottage cheese (or Greek yogurt or silken tofu)
  • 1 cup Diced bell peppers
  • 1 cup Chopped spinach (fresh or frozen)
  • 1/2 cup Shredded cheese (or dairy-free for vegan option)
  • 1 tsp Salt
  • 1 tsp Pepper
  • Herbs or spices (like basil or red pepper flakes)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the diced bell peppers in a skillet over medium heat until tender, about 5 minutes. Add spinach if using frozen.
  3. Mix the pasteurized egg whites with cottage cheese until creamy.
  4. Season the egg mixture with salt, pepper, and any herbs or spices. Fold in the sautéed veggies and shredded cheese.
  5. Fill a greased muffin tin or silicone molds with the egg mixture, filling three-quarters full.
  6. Bake for about 20 minutes until set and slightly golden.
  7. Cool for a few minutes before removing from molds and serve warm.

Notes

These bites can be stored in an airtight container for up to 4 days or frozen for a month. Reheat in the microwave or oven.
