Ingredients

Scale
  • 1.5 to 2 pounds Chicken Tenders (can use boneless breasts cut into strips)
  • 1.5 cups All-Purpose Flour (seasoned; substitute with gluten-free flour if needed)
  • 1 teaspoon Kosher Salt (adjust to taste)
  • ¼ teaspoon Black Pepper (preferably freshly ground)
  • ¼ teaspoon Garlic Powder (fresh garlic can be used)
  • ¼ teaspoon Smoked Paprika (regular paprika can be a substitute)
  • 1 large Egg (for coating)
  • 2 tablespoons Water (for egg wash)
  • Vegetable Oil (for frying)
  • ¾ cup Buttermilk (can substitute with milk mixed with vinegar or yogurt)
  • ½ cup Cold Butter (cut into the flour; unsalted is best)
  • 1 tablespoon Baking Powder (essential for lift)
  • ¼ teaspoon Baking Soda (works with buttermilk for rising)
  • 1 cup Honey (for sweetness)
  • 2 teaspoons Crushed Red Pepper Flakes (adds heat)
  • 1 tablespoon Apple Cider Vinegar (balances sweetness)

Instructions

  1. Prepare the Chicken Tenders: Season the chicken with kosher salt, black pepper, garlic powder, and smoked paprika.
  2. Create the Breading Station: In a shallow dish, whisk together the seasoned flour. Combine the egg and water for the egg wash.
  3. Coat the Chicken: Dip the seasoned chicken tenders in the flour, then the egg wash, and coat again in the flour.
  4. Heat the Oil: Fill a frying pan with vegetable oil and heat it over medium heat until it reaches 350°F.
  5. Fry the Chicken Tenders: Add the coated chicken in batches and fry until golden brown, about 5–6 minutes per side.
  6. Make the Buttermilk Biscuits: In a large bowl, mix the flour, baking powder, baking soda, and salt. Cut in the cold butter until coarse crumbs form. Stir in the buttermilk.
  7. Shape the Biscuits: Roll out the dough to about 1-inch thickness, cut into biscuits, and place on a baking sheet.
  8. Bake the Biscuits: Preheat the oven to 425°F and bake for 12-15 minutes until golden brown.
  9. Prepare the Hot Honey Sauce: Mix honey, crushed red pepper flakes, and apple cider vinegar in a saucepan and warm over low heat.
  10. Assemble the Dish: Slice biscuits, place a chicken tender inside each, and drizzle with hot honey sauce.

Notes

These biscuits can be paired with coleslaw or fresh greens for a complete meal.
