A creamy and savory chicken pasta that captures the essence of love, perfect for sharing with someone special.

Ingredients

  • 1 lb Pasta (Your choice of shape)
  • 2 Tablespoons Butter
  • 1/2 Onion, finely diced
  • 1 1/2 lbs Chicken Breast, cut into cubes
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 cloves Garlic, minced
  • 1 1/2 cups Chicken Broth
  • 2 cups Heavy Cream
  • 2/3 cup Sundried Tomatoes, chopped
  • 1/4 to 1/2 teaspoon Red Pepper Flakes
  • 1 cup Fresh Baby Spinach
  • 4 ounces Parmesan Cheese, grated
  • 56 leaves Fresh Basil
  • 1 teaspoon Italian Seasoning (Optional)

Instructions

  1. Boil the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water just in case you need to loosen the sauce later.
  2. Sauté the Onions: In the same pot, melt 2 tablespoons of butter over medium heat. Add the finely diced onion and sauté until softened, around 3-4 minutes.
  3. Cook the Chicken: Add the cubed chicken breast to the pot, seasoning it with salt, pepper, and Italian seasoning if using. Cook until the chicken is browned and fully cooked through, about 6-7 minutes.
  4. Add Garlic: Stir in the minced garlic, letting it sauté for another 1-2 minutes until fragrant.
  5. Create the Sauce: Pour in the chicken broth, allowing everything to simmer for a couple of minutes. Then, reduce the heat and add the heavy cream, whisking until the sauce is smooth and creamy.
  6. Stir in Sundried Tomatoes and Spinach: Mix in the chopped sundried tomatoes and fresh baby spinach, stirring until the spinach has wilted.
  7. Combine with Pasta: Add the cooked pasta, tossing everything gently to coat in the creamy sauce. Adjust thickness with reserved pasta water if needed.
  8. Finish with Cheese and Seasoning: Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Taste and adjust seasoning.
  9. Serve with Love: Plate the pasta and garnish with fresh basil leaves.

Notes

To save time, prep chicken and veggies ahead. For a dairy-free version, substitute coconut cream and nutritional yeast for the heavy cream and Parmesan.
