A quick and easy keto-friendly mug cake that satisfies coffee cake cravings without derailing your diet.

Ingredients

Scale
  • 4 tablespoons Almond Flour
  • 2 tablespoons Erythritol (or other keto-friendly sweeteners)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 pinch Salt
  • 1 large Egg (flax egg for vegan option)
  • 3 tablespoons Almond Milk (unsweetened preferred)
  • 1 tablespoon Melted Butter (or coconut oil for dairy-free)
  • 1 teaspoon Vanilla Extract (or almond extract)
  • 2 tablespoons Nuts (chopped, keto-friendly)
  • 2 tablespoons Sugar-Free Chocolate Chips

Instructions

  1. Gather your ingredients.
  2. Mix the dry ingredients in a mug.
  3. Add the wet ingredients and mix until smooth.
  4. Fold in the chopped nuts and chocolate chips.
  5. Microwave for about 90 seconds until fluffy.
  6. Let it cool for a minute.
  7. Enjoy!

Notes

Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days.
