A light and refreshing shrimp salad inspired by the classic delis of Manhattan, perfect for summer meals.

  • 1 pound shrimp, pre-cooked and deveined
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 stalks celery, finely diced
  • 2 tablespoons chives, chopped
  • Salt and pepper to taste
  • Optional: 1/2 cup Greek yogurt, 1 cup cucumber, finely diced, 1/2 cup red onion or bell pepper

Instructions

  1. Rinse the cold shrimp under running water, pat dry with paper towels, and cut into uniform-sized pieces.
  2. Whisk together mayonnaise, lemon juice, and Dijon mustard until smooth and creamy.
  3. Stir in garlic powder, paprika, salt, pepper, diced celery, and chopped chives until well combined.
  4. Fold in the shrimp, being careful not to break them apart.
  5. Taste the mixture and adjust the seasoning if necessary.
  6. Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve on toasted rye bread for a classic deli sandwich experience.
