  • 2 units shallots
  • 2 medium carrots
  • 2 small leeks
  • 45 cloves garlic
  • 1.5 cups dry white wine
  • 2 cans (14.5 oz each) fire roasted diced tomatoes
  • 4 oz tomato paste
  • 2.53 cups fish stock
  • 1 bay leaf
  • 1 tsp red pepper flakes
  • 1 tbsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 2 tsp sugar
  • 1 tsp salt
  • 0.5 lb mussels
  • 0.5 lb manila clams
  • 1 lb jumbo shrimp
  • 1 lb white fish of choice

Instructions

  1. Prepare Your Ingredients: Start by dicing the vegetables and measuring out all liquids and seasonings.
  2. Heat the Oil: Preheat a large Dutch oven over medium heat and add the olive oil until shimmering.
  3. Add Garlic: Smash and mince the garlic, then toss it into the pot and sauté for just a minute.
  4. Mix in the Tomatoes: Carefully add the fire-roasted diced tomatoes, tomato paste, seasonings, and fish stock.
  5. Simmer the Broth: Allow the stew to simmer over medium-low heat for 20-25 minutes.
  6. Add Mussels and Clams: Gently place the mussels and clams in the pot to open up.
  7. Incorporate the Seafood: Finally, add the chopped white fish and shrimp and cook until opaque and tender, about 5-7 minutes.

Notes

Choose good quality seafood for the best flavor. Homemade fish stock elevates the dish, but store-bought works in a pinch. Don’t skip the sugar as it balances the acidity of the tomatoes beautifully.
