Savory Queso Chicken Enchiladas for a Quick Family Feast

These comforting enchiladas are filled with succulent chicken, creamy queso sauce, and topped with melted cheese, perfect for a family meal.

Ingredients

  • 4 pieces Burrito Size Flour Tortillas
  • 3 cups Shredded Chicken
  • 1 packet Taco Seasoning
  • 1 cup Sour Cream
  • 1 cup Cheddar Cheese (shredded)
  • 1 can Chopped Green Chilies
  • 1 can Diced Tomatoes with Green Chilies (undrained)
  • 16 oz Queso Blanco Velveeta

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, taco seasoning, chopped green chilies, and sour cream in a large bowl.
  3. Lay each tortilla flat, add a scoop of the chicken mixture, and roll tightly. Place seam-side down in a greased baking dish.
  4. Melt the Queso Blanco Velveeta in a saucepan over low heat, stirring constantly. Mix in the diced tomatoes with green chilies.
  5. Pour the cheese mixture over the rolled tortillas and sprinkle with shredded cheddar cheese.
  6. Bake in the preheated oven for about 25 minutes, until bubbly and slightly golden.
  7. Cool for a few minutes before serving.

Notes

Pair with a light salad or refried beans for an extra feast.
