Crispy shrimp coated in a spicy blend of Sichuan peppercorns and chilies, perfect for snacking or as an appetizer.

Ingredients

  • 1820 pieces Large Shrimp
  • 1 large Egg
  • 1 cup Cornstarch
  • 1 tbsp Sichuan Peppercorns
  • 1 tbsp Black Peppercorns
  • 1 tbsp Sea Salt
  • 1 long Thai Red Chilli
  • 2 long Dried Red Chilies
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Chinese Cooking Wine
  • 1 tbsp Vegetable Oil
  • 2 pieces Green Onions
  • Coriander
  • Lime Wedges

Instructions

  1. Prepare the Shrimp: Peel and devein the shrimp, leaving the tails on. Rinse and pat dry.
  2. Create the Crispy Coating: Whisk the egg, coat shrimp, and toss with cornstarch.
  3. Spice It Up: Combine Sichuan peppercorns, black peppercorns, sea salt, and chilies.
  4. Bring the Heat: Heat vegetable oil in a frying pan over medium-high heat.
  5. Fry to Perfection: Fry shrimp in batches for 2-3 minutes on each side until golden.
  6. Toss in Flavor: Transfer shrimp to a paper towel-lined plate, then toss with the spice mixture.
  7. Garnish and Serve: Plate shrimp and garnish with green onions, coriander, and lime wedges.

Notes

Don’t skip the cornstarch for the best crunch! Store in an airtight container for up to 2 days.
