Spicy Sheet Pan Peri Peri Chicken

A flavorful and easy dish that brings a taste of adventure to your weeknight dinner with juicy peri peri chicken and crispy potatoes.

Ingredients

  • 4 pieces Chicken Thighs
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic
  • 1 piece Chili Pepper
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 1 tablespoon Coconut Sugar
  • to taste Salt
  • to taste Pepper
  • 2 pounds Potatoes
  • 2 tablespoons Olive Oil
  • to taste Salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, minced garlic, chopped chili pepper, lemon juice, paprika, oregano, coconut sugar, salt, and pepper.
  3. Place the chicken thighs in a large bowl and generously coat them with the marinade.
  4. While the chicken is marinating, wash and chop the potatoes into bite-sized pieces.
  5. In a separate bowl, toss the chopped potatoes with olive oil, sea salt, and a dash of pepper.
  6. Grab a large sheet pan and arrange the marinated chicken thighs in the center.
  7. Place the sheet pan in the preheated oven and bake for 30-35 minutes.
  8. Once baked, remove the sheet pan from the oven and let it rest for a few minutes.

Notes

For a twist, use smoked paprika and adjust the chili for desired heat.
