Delightful and healthy Sweet Date Cookies featuring rich Medjool dates, a treat that’s both chewy and satisfying.

  • 1/2 cup Unsalted Butter, softened
  • 1/4 cup Brown Sugar, packed
  • 1/4 cup Granulated Sugar
  • 1 large Egg, at room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened unsalted butter, packed brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla extract, beating until fully combined.
  4. Mix the all-purpose flour, baking soda, ground cinnamon, and salt in a separate bowl.
  5. Combine the dry ingredients into the wet mixture gently.
  6. Fold in the chopped Medjool dates until evenly distributed.
  7. Scoop generous amounts of dough onto the prepared baking sheet, spacing them apart.
  8. Bake for about 10-12 minutes or until the edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

For the best flavor, ensure you use fresh Medjool dates. Store cookies in an airtight container for up to a week or freeze for longer storage.
