Ingredients

Scale
  • 3 pounds pork loin
  • 1 tablespoon olive oil
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and fresh ground pepper to taste
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 3 tablespoons low-sodium gluten-free soy sauce
  • 1 tablespoon dijon mustard
  • 1 pound brussels sprouts, cut in half
  • 1 pound butternut squash, peeled and cut into 1-inch cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the pork loin dry and season with salt, pepper, and spices.
  2. Sear the pork in a skillet with olive oil for 3-4 minutes on each side until golden brown.
  3. Mix minced garlic, honey, soy sauce, and dijon mustard in a bowl to make the glaze.
  4. Pour the glaze over the seared pork and roast in the oven for 45-60 minutes.
  5. Toss the brussels sprouts and butternut squash with olive oil, salt, and pepper.
  6. Roast the veggies in the oven during the last 30 minutes of the pork cooking time.
  7. Rest the pork for 10-15 minutes before slicing.
  8. Slice the pork and serve with roasted vegetables, drizzled with remaining glaze.

Notes

Let the meat rest before slicing for juicier results. A meat thermometer will help ensure perfect doneness.
