A delightful dessert combining the rich flavors of Boston Cream Pie and cheesecake, featuring a creamy filling on a chocolate cookie crust topped with glossy ganache.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 4 ounces semi-sweet chocolate, chopped
  • 1/2 cup heavy cream (for ganache)
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it lightly.
  2. Mix the chocolate cookie crumbs with melted butter until combined, then press into the bottom of the prepared pan.
  3. Beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Pour the cream cheese mixture over the crust and bake for 50-60 minutes.
  6. Turn off the oven and let the cheesecake sit inside for an hour.
  7. Refrigerate the cheesecake for at least 4 hours or overnight.
  8. Heat 1/2 cup of heavy cream until simmering and pour it over the chopped chocolate and butter, stirring to combine.
  9. Pour the ganache over the chilled cheesecake, spreading it evenly.

Notes
