Delicious cookies combining the flavors of cinnamon rolls and cheesecake for a delightful treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup powdered sugar
  • 2 teaspoons cinnamon
  • 1/2 cup granulated sugar (for the cinnamon sugar coating)
  • 1/2 cup vanilla icing (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Cream the softened unsalted butter, brown sugar, and granulated sugar until smooth and creamy.
  4. Mix in the egg and vanilla extract until fully combined.
  5. Combine the dry mixture into the wet mixture, mixing until just combined.
  6. Prepare the cream cheese filling by beating softened cream cheese with powdered sugar until smooth.
  7. Form the cookie dough around a small amount of cream cheese filling and roll it into a ball.
  8. Create the cinnamon sugar coating by mixing granulated sugar and cinnamon.
  9. Bake the coated dough balls for 10-12 minutes or until golden.
  10. Cool the cookies slightly and drizzle with vanilla icing before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
