A heartwarming seafood chowder filled with tender salmon, Yukon Gold potatoes, and fresh dill, perfect for chilly evenings.

Ingredients

  • 1 lb salmon, cut into chunks
  • 2 Yukon Gold potatoes, diced
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • Optional: bread for serving

Instructions

  1. Sauté the onion, carrots, and potatoes in a little oil over medium heat until they start to soften.
  2. Add the broth and bring the mixture to a vigorous boil.
  3. Reduce the heat and let everything simmer until the potatoes are tender, about 10-15 minutes.
  4. Carefully stir in the salmon and let it cook for an additional 5-7 minutes until the fish is cooked through.
  5. Add in the heavy cream and fresh dill, then season with salt and pepper to taste.
  6. Serve the chowder hot, optionally with crusty bread on the side for dipping.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3 days. For a lighter version, swap heavy cream with milk or a non-dairy alternative.
