A warm and hearty stew featuring white fish in a creamy coconut broth, bursting with vibrant flavors.

Ingredients

  • 1 lb white fish (such as cod or halibut)
  • 1 can (14 oz) coconut milk
  • 2 cups diced tomatoes (fresh or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp curry powder
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Sauté the chopped onion, minced garlic, and grated ginger over medium heat until the onion is translucent.
  2. Add the curry powder and turmeric, cooking for another minute until fragrant.
  3. Pour in the diced tomatoes and coconut milk, then bring to a simmer.
  4. Cut the white fish into chunks and add them to the pot.
  5. Cook until the fish is cooked through, about 5-7 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and lime wedges.

Notes
