Delightful crispy smashed potatoes with garlic butter and Parmesan cheese, perfect as a side dish or snack.

Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the baby potatoes in salted water for about 15-20 minutes until fork-tender. Drain and cool slightly.
  3. Smash the potatoes on a baking sheet using a fork or potato masher.
  4. Prepare garlic butter by melting butter in a saucepan and adding minced garlic for 1-2 minutes until fragrant.
  5. Brush garlic butter over the smashed potatoes, then sprinkle with Parmesan cheese, salt, and pepper.
  6. Bake for 20-25 minutes until golden brown and crisp.
  7. Garnish with fresh parsley and serve warm.

Notes

For an extra crispy finish, consider broiling for a minute after baking. Store leftovers in an airtight container for up to 3-4 days.
