Crispy Oven Roasted Baby Potatoes

Deliciously crispy on the outside and fluffy on the inside, these roasted baby potatoes are seasoned with garlic and fresh herbs, perfect for any meal.

Ingredients

  • Baby potatoes
  • Olive oil
  • Garlic (minced)
  • Fresh herbs (such as rosemary or thyme)
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes under cold water and slice each potato in half.
  3. Toss the halved potatoes in a bowl with olive oil, minced garlic, fresh herbs, salt, and pepper.
  4. Spread the coated potatoes out in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through.
  6. Serve hot as a delicious side dish or snack!

Notes

For extra crispiness, soak potatoes in water for 30 minutes before cooking. You can also sprinkle grated Parmesan on top during the last 5 minutes of roasting.
