A heartwarming recipe for a tender and flavorful beef stew made in a slow cooker.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Prep the vegetables and beef: In a large slow cooker, add the beef, carrots, potatoes, onion, and garlic.
  2. Whisk the broth mixture: In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, salt, pepper, and bay leaf.
  3. Combine both mixtures: Pour the broth mixture over the beef and vegetables.
  4. Set to cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  5. Remove the bay leaf: Once cooking is complete, remove the bay leaf before serving.
  6. Serve and enjoy: Serve with crusty bread or creamy mashed potatoes.

Notes

For extra flavor, consider adding a splash of red wine to the broth mixture.
