A comforting dish of garlic chicken bites in a creamy Cajun spinach artichoke Alfredo pasta that brings friends together.

Ingredients

  • 8 oz fettuccine or penne pasta
  • 1 lb chicken breast (cut into bite-sized pieces)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 cups fresh or frozen spinach
  • 1 cup artichoke hearts (canned, drained, and chopped)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the chicken in olive oil over medium heat, seasoned with Cajun seasoning, until cooked through. Remove from pan.
  3. Sauté the minced garlic in the same pan until fragrant, then add spinach and artichokes until spinach wilts.
  4. Create the creamy base by stirring in heavy cream and simmer. Add Parmesan cheese and stir until melted.
  5. Combine the cooked pasta and chicken in the sauce, coating evenly.
  6. Season with salt and pepper to taste, then serve hot.

Notes

For deeper flavors, marinate the chicken in Cajun seasoning before cooking. Use frozen spinach if fresh is unavailable.
