Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup cold unsalted butter, cubed
  • 6–8 tablespoons ice water

Instructions

  1. Whisk together the flour, salt, and sugar in a large bowl.
  2. Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, until the dough comes together.
  4. Chill the dough by dividing it in half, shaping it into discs, wrapping in plastic wrap, and refrigerating for at least 1 hour.
  5. Roll out the dough on a floured surface to fit your pie pan, aiming for a thickness of about 1/8 inch.
  6. Use as directed for sweet or savory fillings.

Notes

For a richer flavor, consider adding ground nuts or using half whole wheat flour. Refrigerate or freeze leftover dough.
