A comforting dish with gooey cheese and a golden breadcrumb topping, perfect for gatherings and cozy nights.

  • 2 cups macaroni
  • 2 cups sharp cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • 1 can (12 oz) evaporated milk
  • 1/2 cup milk
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package directions until it’s al dente, then drain and set aside.
  3. Melt the butter in a large pot over medium heat.
  4. Whisk in the flour to create a roux, cooking for about 1 minute.
  5. Whisk in the evaporated milk and regular milk until smooth and creamy.
  6. Add the garlic powder, onion powder, salt, and pepper, stirring to combine.
  7. Stir in the cheddar and Monterey Jack cheeses until melted.
  8. Mix in the cooked macaroni until well coated in the cheese sauce.
  9. Transfer to a greased baking dish and sprinkle with breadcrumbs if using. Bake for 25-30 minutes until golden and bubbly.

Notes

For the creamiest sauce, avoid pre-shredded cheese and grate your own. Feel free to add diced jalapeños or bacon for extra flavor.
