Moist Puerto Rican Beef Stew

Experience the warmth and comfort of this traditional Puerto Rican beef stew, packed with tender beef, potatoes, and carrots.

Ingredients

Scale
  • 1.5 lbs chuck roast, cut into chunks
  • 1 cup sofrito
  • 1 packet sazón seasoning
  • 1 can (8 oz) tomato sauce
  • 4 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • Salt and pepper to taste
  • Water or beef broth as needed

Instructions

  1. Sear the chuck roast in a large pot over medium heat until browned.
  2. Add the sofrito and sazón seasoning, stirring to coat the meat.
  3. Mix in the tomato sauce and enough water or beef broth to cover the ingredients.
  4. Bring to a boil, then reduce heat and let it simmer for 1.5 hours.
  5. Add the diced potatoes and sliced carrots, cooking for another 30-40 minutes until tender.
  6. Season with salt and pepper to taste before serving.

Notes

Serve with fluffy white rice or crusty bread. This stew can be stored in the fridge for up to 4 days or frozen for 3 months.
