Ingredients

  • 1 pound chicken thighs or breasts
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Cooked broccoli
  • Cooked rice

Instructions

  1. Mix the flavors in a slow cooker with soy sauce, honey, rice vinegar, minced garlic, and ground ginger.
  2. Add the chicken to the sauce, ensuring it is well covered.
  3. Cook on low for 4-6 hours until the chicken is tender.
  4. Remove the chicken and shred it for better texture.
  5. Mix cornstarch with water and stir it into the sauce to thicken.
  6. Return the shredded chicken to the slow cooker and mix well with the sauce.
  7. Serve over rice with cooked broccoli on the side.
