  • 1 cup basmati rice
  • 1 can chickpeas (drained and rinsed)
  • 2 tablespoons turmeric
  • 2 cups vegetable broth
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh herbs (like parsley or cilantro)
  • Optional: yogurt or tahini for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until fragrant and translucent, about 3-4 minutes.
  2. Stir in the turmeric, rice, and chickpeas, ensuring everything is mixed well and coated with the lovely golden hue.
  3. Pour in the vegetable broth, bringing everything to a boil.
  4. Reduce heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Fluff the rice with a fork. Season it with salt, pepper, and stir in the lemon juice and fresh herbs.
  6. Serve warm, topped with a dollop of yogurt or tahini if desired.

Notes

For a creamier texture, add a splash of coconut milk along with the vegetable broth. Adjust spices according to your taste.
