Broccoli, Barley, and Cannellini Bean Soup

A cozy soup made with vibrant broccoli, hearty barley, and creamy cannellini beans, perfect for warming your soul.

Ingredients

  • 2 cups chopped broccoli
  • 1 cup barley
  • 1 can cannellini beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the diced onion and minced garlic until the onions become translucent, about 5 minutes.
  3. Mix in the barley and vegetable broth, stirring together and bringing to a boil.
  4. Reduce the heat and let it simmer for about 30 minutes, or until the barley is tender.
  5. Add the chopped broccoli and rinsed cannellini beans, cooking together for an additional 10 minutes.
  6. Season with dried thyme, salt, and pepper to taste, then serve hot.

Notes

Reheat leftovers on the stove or microwave, and consider adding a splash of broth if it thickens too much.
