A comforting Cheeseburger Casserole that combines the classic flavors of a cheeseburger into an easy, low-carb meal for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 large eggs
  • 2 tablespoons mustard

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef, onion, and garlic in a skillet over medium heat until browned.
  3. Add salt and pepper, then fold in cauliflower florets and cook for 5 minutes.
  4. Mix together cheddar cheese, sour cream, mayonnaise, eggs, and mustard in a bowl.
  5. Pour the beef mixture into the cheese mixture and stir until combined.
  6. Spread the mixture in a greased baking dish evenly.
  7. Bake for 30-35 minutes until set and golden on top.
  8. Cool for a few minutes before serving.

Notes

Serve with a fresh green salad or roasted vegetables. Store leftovers in an airtight container for up to 4 days.
