Delightful bite-sized snacks made from leftover mashed potatoes, perfect for parties or cozy side dishes.

Ingredients

  • 2 cups mashed potatoes (preferably cold/leftover)
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 2 tablespoons chopped chives or green onions
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon garlic powder or paprika
  • Butter or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a mini muffin tin with butter or cooking spray to prevent sticking.
  3. Combine the mashed potatoes, cheddar cheese, Parmesan, eggs, chives, and seasonings in a bowl. Mix until well combined and smooth.
  4. Scoop the mixture into the mini muffin cups, filling them just to the top.
  5. Bake for 20–25 minutes or until the puff bites are puffed up and golden brown on top.
  6. Cool for a few minutes before removing from the pan. Serve warm as a snack, side dish, or party appetizer.

Notes

These bites are versatile—feel free to add herbs, spices, or other ingredients like cooked bacon or different cheeses.
