Christmas Tortellini Soup

A comforting and festive Christmas Tortellini Soup with cheesy tortellini, fresh spinach, and hearty tomatoes.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 bag (9 oz) refrigerated tortellini
  • 4 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Pour in the vegetable broth and diced tomatoes. Stir and bring to a simmer.
  4. Introduce the refrigerated tortellini and cook according to package instructions.
  5. Stir in the fresh spinach and Italian seasoning until the spinach wilts.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. Freeze for up to 2 months without spinach.
